We
produce an extremely fine olive oil, which is the result of a first
and cold press production. This is a stone ground, single estate
extra virgin oil, which is the result of a highly rated production.
The total production is still following traditional methods and is nowadays
very rare to be found. The olives are all hand picked and most importantly
not mixed with other types of olives. All
the olives picked are stone ground in a very traditional way, at a nearby
mill. The olives we produce are of a Protected Geographic Indication (P.G.I.).
This is not just a formal quality. P.G.I. oil have a very low (near to
zero) grade of acidity as it is produced from a highly suitable soil and
area. This quality infers to the oil a fruitiness and full body. All this
contributes to a production which is not comparable to industrial production,
and where the final results are extraordinary.
